Chaamp Masala (lamb Chops Masala) Recipe

Ingredients
  • 2 tb Fresh cilantro; sliced
  • 1/2 c Sharp Cheddar cheese; grated
  • 1/3 c Reduced-fat sour cream
  • 2 tb Tomato salsa
  • Salt & freshly ground pepper
  • 1/2 c Monterey Jack cheese OR
  • 1/4 c Buttermilk
  • 4 Baking potatoes scrubbed

Directions
  • Step #1 Pierce potatoes with a fork & wrap individually in a double thickness of paper towels.
  • Step #2 Microwave on high for 5 mins.
  • Step #3 Rotate the potatoes & microwave on high until tender, about 5 mins more.
  • Step #4 Unwrap the potatoes & let cool slightly.
  • Step #5 Cut off a 1/4-inch thick slice along the top of each potato.
  • Step #6 With a melon baller or tsp, carefully hollow out the potatoes, leaving the shells.
  • Step #7 Put the insides in a medium-sized bowl, & mash with a fork or potato masher.
  • Step #8 Add sour cream, buttermilk, cilantro & salsa; mix well.
  • Step #9 Spice up this with salt & pepper.
  • Step #10 Fill the shells with the potato mixture.
  • Step #11 Arrange the potatoes in a microwave-safe pie plate or baking dish.
  • Step #12 Cover with vented plastic wrap.
  • Step #13 Microwave on high for 5 mins, or until heated through.
  • Step #14 Sprinkle top the potatoes with cheese & serve.
