Cheddar Parmesan Potatoes Recipe

Ingredients
  • 8 oz Cheddar; md, grated
  • 1 ts Unbleached flour
  • 1/2 ts Mustard; dry
  • 3/4 ts Salt
  • 1 1/2 ts Thyme
  • 3/4 c Dairy sour cream
  • 2 ts Unbleached flour; plus
  • 2 ts Butter
  • 3 ea Egg yolks, lg, beaten

Directions
  • Step #1 Set out a heavy skillet.
  • Step #2 Put the grated Cheddar Cheese in a bowl and add the sour cream & egg yolks, mixing well after each addition.
  • Step #3 Add the flour salt thyme & dry mustard, which have been mixed well in a separate bowl or c.
  • Step #4 Melt the butter in the skillet over low heat & drop the batter by tsp into the skillet.
  • Step #5 Cook over medium heat until lightly browned on the bottom.
  • Step #6 Loosen the edges with a spatula, turn & lightly brown the other side.
  • Step #7 Serve at once with bacon or pork sausage.
  • Step #8 Makes about 2 dozen 3-inch cakes.
