Chef Bill Hahne's Bananas Foster Bread Pudding Recipe

Ingredients
  • 1 md Onion; sliced
  • 1 1/2 c Heavy cream
  • 3 md Leeks; white only, sliced fine
  • 4 c Chicken stock
  • 2 tb Butter
  • Salt & freshly ground pepper
  • 3 oz Prepared horseradish or to taste
  • ds Nutmeg
  • 4 md Potatoes; peeled & sliced

Directions
  • Step #1 --GARNISH----- 1/4 lb Smoked salmon; julieened 1 tb Fresh dill; sliced 4 tb Pickled red cabbage 1 oz Sevruga caviar In a soup pot, saute leeks & onion in butter for 3 mins.
  • Step #2 Add potatoes & chicken stock.
  • Step #3 Bring to a boil & let simmer 20 mins.
  • Step #4 Put through a sieve or into a mixer to puree, & add heavy cream.
  • Step #5 Spice up this with salt, pepper & nutmeg.
  • Step #6 Add horseradish & stain the soup if desired.
  • Step #7 Chill in an ice bath & put in the fridge.
  • Step #8 Just prior to serving, ladle into bowls & garnish with salmon, dill, pickled cabbage & caviar.
