Pasta Salad With Currants Olives & Pine Nuts Recipe

Ingredients
  • 1 lb Precooked shanghai noodles
  • 1 Small garlic clove, crushed
  • 1 ts Salt
  • 2/3 c Vegetable oil
  • 1/2 lb Shrimp, shelled deveined
  • 1 ts Egg white
  • 1 Dash sesame oil for noodles
  • 1 tb Cream
  • 1/4 ts White pepper ---------dressing----------
  • 1/2 lb Snow peas
  • 2 ts Lemon juice
  • 1/2 ts Chinese cooking wine
  • 3 tb Fresh ginger, grated
  • 1 tb Oil
  • 2 tb Coriander, sliced
  • 2 tb Scallions, minced -----shrimp marinade-------
  • 1 Egg yolk
  • 1 1/2 ts Soy sauce
  • 2 1/2 tb Sesame oil

Directions
  • Step #1 Mix the marinade ingredients in a small bowl & add shrimp.
  • Step #2 Blanch the noodles, rinse under cool water & Sprinkle top with sesame seed oil, toss, & set aside.
  • Step #3 (You may want to trim noodles with scissors to about 4 inches in length, to make serving easier.
  • Step #4 ) Blanch whole snow peas & set aside.
  • Step #5 Heat wok, when oil is hot, add 1 tbsp oil, add shrimp & stir-fry until pink.
  • Step #6 Set aside.
  • Step #7 DRESSING: In a mixer or food processor/blender, egg yolk, garlic, mix ginger, egg white, & lemon.
  • Step #8 Slowly drizzle in oil.
  • Step #9 Mix in soy & cream.
  • Step #10 Set aside.
  • Step #11 Toss noodles, shrimps, & snow peas.
  • Step #12 Mix in dressing to tastee.
  • Step #13 Garnish with scallions & coriander.
  • Step #14 Serve at about room temp.
