Pasta With Salmon & Dill Recipe

Ingredients
  • 1 c water
  • 1 C lowfat cottage cheese
  • 2/3 C sun-dried tomatoes
  • 2 T Skim milk
  • 1 T Romano/grated
  • 1 Bay leaf
  • 1 T Vinegar
  • 8 Oz salmon fillet
  • 1/8 T Nutmeg/grated
  • 8 Oz spinach fettuccine

Directions
  • Step #1 In large frying pan, mix water, vinegar & bay leaf.
  • Step #2 Bring to a boil.
  • Step #3 Reduce heat to low; add salmon.
  • Step #4 Cover; simmer 5 mins or until opaque.
  • Step #5 Discard bay leaf.
  • Step #6 Remove salmon with slotted spoon; let cool.
  • Step #7 Break into 1" pieces.
  • Step #8 Set aside.
  • Step #9 In mixer or processor, mix cottage cheese, milk & nutmeg.
  • Step #10 Process until smooth.
  • Step #11 In large pot of boiling water, cook fettucine until just tender.
  • Step #12 Drain & transfer to a large serving bowl.
  • Step #13 Add tomatoes, romano & half of cottage cheese mix.
  • Step #14 Toss to mix.
  • Step #15 add salmon & remaining cheese mix.
  • Step #16 Toss carefully.
