Pastel De Manzana - Apple Mint Crisp Recipe

Ingredients
  • 5 Eggs
  • 100 g Butter
  • 5 Cobs of sweet corn
  • Cinnamon or vanilla
  • 100 g Cream cheese

Directions
  • Step #1 Put everything in the mixer & mix well, but not to a perfectly smooth puree, there should be little chunks of corn discernible.
  • Step #2 Pour into a greased tin & bake for 1 hr in a medium oven.
  • Step #3 serve this with warmed syrup poured over it.
  • Step #4 This is light, yet substantial, & has a unique flavour.
  • Step #5 The syrup can be flavoured with cinnamon or vanilla too.
  • Step #6 The corn should be the sweetest & freshest available, since the recipe contains no extra sugar or starch other than what the corn provides.
