Cissy's Shrimp Penne Recipe

Ingredients
  • 1/4 c dry vermouth
  • 1 c grated Parmesan cheese
  • 1 shallot, sliced
  • 1 (16 oz) package dried penne pasta
  • 2 c dry white wine
  • 1/2 c unsalted butter
  • freshly ground black pepper to taste
  • 1 c sliced Italian flat leaf parsley
  • 2 lbs large uncooked shrimp, peeled
  • 3 cloves garlic, sliced
  • 1 tbsp extra virgin olive oil
  • 2 c fish stock

Directions
  • Step #1 Bring a large pot of lightly salted water to a boil.
  • Step #2 Stir in penne pasta, until al dente, cook for 8 to 10 mins, & drain.
  • Step #3 Heat the olive oil in a large skillet over med-heat/flame, & cook the shallot & garlic until tender.
  • Step #4 Pour in the fish stock, white wine, & vermouth, & let simmer 15 mins, or until reduced to a thick golden glaze.
  • Step #5 Place the shrimp & butter into the skillet.
  • Step #6 Cover, & cook 5 mins over low heat/flame, until shrimp are opaque.
  • Step #7 Mix the cooked penne pasta into the skillet, & carefully toss with the shrimp & glaze.
  • Step #8 Top with parsley, Parmesan cheese, & pepper to serve.
