Ingredients
  • 1 green onion, sliced
  • salt & pepper to taste
  • 1 tbsp lemon juice
  • 1/4 c safflower oil
  • 2 tbsps olive oil
  •  
  • 2 tomatoes, sliced
  • 1 stalk celery, sliced
  • 1 (15 oz) can red beets, drained & sliced
  • 1/4 c minced fresh dill weed
  • 2 tbsps red wine vinegar
  • 2 tbsps walnut oil

Directions
  • Step #1 In a bowl, red wine vinegar, olive oil, lemon juice, whisk together the safflower oil, walnut oil, & dill.
  • Step #2 Spice up with salt & pepper.
  • Step #3 In a separate bowl, celery, green onion, toss together the tomatoes, & beets.
  • Step #4 Toss with the dressing mixture just before serving.
