Cranberry Pecan Muffins Recipe

Ingredients
  • 2 tbsps sugar
  • 1/2 tsp ground nutmeg
  • 1 c sugar
  • TOPPING:
  • 3/4 c coarsely sliced fresh or frozen cranberries
  • 2 eggs
  • 2 c all-purpose flour
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 c butter or margarine, softened
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 c sliced pecans
  • 1 c sour cream
  • 1/8 tsp ground nutmeg

Directions
  • Step #1 In a mixing bowl, cream butter & sugar.
  • Step #2 Add eggs, one at a time, beating well after each addition.
  • Step #3 Add vanilla.
  • Step #4 Fold in sour cream.
  • Step #5 Combine the flour, baking soda, baking powder, nutmeg & salt; stir in theto creamed mixture just until moistened.
  • Step #6 Fold in cranberries & pecans.
  • Step #7 Fill greased or paper-lined muffin c two-thirds full.
  • Step #8 Combine topping ingredients; sprinkle it over batter.
  • Step #9 Bake at 400F degrees F for 20-25 mins or until a toothpick comes out clean.
  • Step #10 Cool for 5 mins before removing from pans to wire racks.
