Cock A Leekie Stew Recipe

Ingredients
  • salt & pepper to taste
  • 2 1/2 c water
  • 1/2 c sliced carrots
  • 1 (2 to 3 lb) whole chicken, cut into pieces
  • 1 tsp chicken bouillon powder
  • 1 c barley
  • 1 leek, sliced

Directions
  • Step #1 In a large pot mix the chicken, carrots, barley, water, bouillon & salt & pepper to taste.
  • Step #2 Bring all to a boil.
  • Step #3 Reduce heat, cover & let simmer for 30 mins or until chicken is cooked through & no longer pink inside.
  • Step #4 Skim broth as needed.
  • Step #5 Remove chicken from pot & add leeks.
  • Step #6 Bring back to a boil; reduce heat, cover & let simmer another 15 mins or so, until thickened.
  • Step #7 Meanwhile, skin & debone the cooked chicken.
  • Step #8 Return chicken meat to thickened stew & cook for about 5 mins to heat through.
  • Step #9 Serve hot.
