Step #1 Heat the oil in a wok over med-heat/flame.
Step #2 Place chicken in the wok, & cook this until juices run clear.
Step #3 Mix in red bell pepper, & continue cooking until tender.
Step #4 In a bowl, cayenne pepper, ginger, garlic, soy sauce, sugar, mix the broth, & cornstarch.
Step #5 Pour into the wok.
Step #6 Toss green onions & cilantro into wok (reserving some of each for garnish).
Step #7 Continue to cook & stir 5 mins, until slightly thickened.
Step #8 Mix in peanuts, & garnish with reserved green onions & cilantro to serve.
