Denise's Peanut Chicken Recipe

Ingredients
  • 1 bunch green onions, sliced
  • 1 medium red bell pepper, sliced
  • 2 c sliced dry roasted peanuts
  • 1 (1 inch) piece fresh ginger root, peeled & sliced
  • 1 tbsp cornstarch
  • 1 tbsp sugar
  • 2 tsps soy sauce
  • 1/4 tsp ground cayenne pepper
  • 1 lb skinless, boneless chicken breast halves - cut into bite-size pieces
  • 1 clove garlic, minced
  • 1 bunch cilantro, sliced
  • 1 1/2 c chicken broth
  • 1 tbsp wok oil or peanut oil

Directions
  • Step #1 Heat the oil in a wok over med-heat/flame.
  • Step #2 Place chicken in the wok, & cook this until juices run clear.
  • Step #3 Mix in red bell pepper, & continue cooking until tender.
  • Step #4 In a bowl, cayenne pepper, ginger, garlic, soy sauce, sugar, mix the broth, & cornstarch.
  • Step #5 Pour into the wok.
  • Step #6 Toss green onions & cilantro into wok (reserving some of each for garnish).
  • Step #7 Continue to cook & stir 5 mins, until slightly thickened.
  • Step #8 Mix in peanuts, & garnish with reserved green onions & cilantro to serve.
