Creamy Rhubarb Dessert Recipe

Ingredients
  • 1 1/2 c all-purpose flour
  • 3 tbsps sugar
  • 3 eggs
  • Additional sliced pecans (optional)
  • 1 tsp vanilla extract
  •  
  • 1/2 c sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 tsp vanilla extract
  • 1/2 c cold butter or margarine
  • 1/2 c sliced pecans
  • 4 c sliced rhubarb
  • CHEESECAKE LAYER:

  • 2 tbsps all-purpose flour
  •  
  • 1 1/2 c sour cream
  • TOPPING:
  • RHUBARB LAYER:
  • 1/2 c sugar

Directions
  • Step #1 In a bowl, cut butter into flour until mixture resembles coarse crumbs; stir in the pecans.
  • Step #2 Press into an ungreased 13-in.
  • Step #3 x 9-in x 2-in.
  • Step #4 baking pan.
  • Step #5 Bake at 350 degrees F for 15 mins.
  • Step #6 Combine rhubarb, sugar & flour; spoon over the crust.
  • Step #7 Bake for 15 mins.
  • Step #8 Meanwhile, in a mixing bowl, beat cream cheese, sugar & vanilla until fluffy.
  • Step #9 Add eggs, one at a time, beating well after each addition.
  • Step #10 Pour over hot rhubarb layer.
  • Step #11 Bake for 30 mins.
  • Step #12 Combine sour cream, sugar & vanilla; spread over hot cheesecake.
  • Step #13 Cool on wire rack for 1 hr.
  • Step #14 Refrigerate overnight.
  • Step #15 Sprinkle top with extra pecans if desired.
