Coconut Carrot Casserole Recipe

Ingredients
  • 1/4 c butter or margarine, softened
  • 1/3 c milk
  • 3 (16 oz) cans sliced carrots, drained & mashed
  • 1/2 c packed brown sugar
  • 1/4 c all-purpose flour
  • 1/2 c sugar
  • 1/2 c sliced pecans
  • 2 tbsps butter or margarine, melted
  • 2 eggs
  • TOPPING:
  • 1 tsp vanilla extract
  • 1/2 c flaked coconut

Directions
  • Step #1 In a mixing bowl, cream butter & sugar.
  • Step #2 Add eggs, milk, vanilla & carrots; mix well.
  • Step #3 Stir in coconut.
  • Step #4 Pour into a greased 2-qt.
  • Step #5 baking dish.
  • Step #6 Combine topping ingredients; sprinkle it over the top.
  • Step #7 Bake, uncovered, at 350 degrees F for 35-40 mins or until golden brown & bubbly.
