Ingredients
  • 1 c mayonnaise
  • 1 pinch salt
  • 3 (11 oz) cans Mexican-style corn, drained
  • 1 tsp fresh lime juice
  • 1 tsp ground cumin
  • 1 bunch green onions, sliced
  • 1/2 c sliced fresh cilantro
  • 2 c sour cream
  • 1 lb Cheddar cheese, shredded
  • 1 pinch cayenne pepper, or to taste

Directions
  • Step #1 In a large serving bowl, cilantro, green onions, mayonnaise, stir this together the corn, sour cream, Cheddar cheese & lime juice.
  • Step #2 Spice up with cumin, cayenne pepper, & salt.
  • Step #3 Stir to mix in seasonings, then put in the fridge until chilled before serving.
