Chickpea And Eggplant Stew Recipe

Ingredients
  • 1 tbsp distilled white vinegar (optional)
  • 1 bunch cilantro, sliced
  • 6 cloves garlic, crushed
  • 1 (14.5 oz) can sliced tomatoes
  • 1 large eggplant - peeled, seeded, & cubed
  • 4 green onions, sliced
  • 1 tbsp olive oil
  • dried oregano to taste
  • 1 1/2 c cubed salami
  • 1 medium green bell pepper, sliced
  • salt & pepper to taste
  • 1 medium onion, sliced
  • 1 (15 oz) can garbanzo beans (chickpeas)
  • 2 bay leaves
  • 1 tbsp tomato paste
  • 6 c water
  • hot sauce (optional)

Directions
  • Step #1 Heat the olive oil in a large saucepan over med-heat/flame.
  • Step #2 Stir in the salami, & cook this until evenly browned.
  • Step #3 Mix in onion, bell pepper, & garlic.
  • Step #4 Cook until tender.
  • Step #5 Mix in eggplant, & season this with salt, pepper, tomato paste, & cilantro, & oregano.
  • Step #6 Continue cooking 15 mins.
  • Step #7 Mash the eggplant as it softens, & add a little water if necessary to keep the ingredients from drying out.
  • Step #8 Stir the garbanzo beans, tomatoes, bay leaves, & green onions into the skillet, & pour in the water.
  • Step #9 Bring to a boil for 5 mins.
  • Step #10 Reduce heat to low, cover, & let simmer 15 mins.
  • Step #11 Stir in vinegar & hot sauce before serving.
