Cinnamon Mocha Cupcakes Recipe

Ingredients
  • 1/2 tsp vanilla extract
  • 14 tbsps all-purpose flour
  • 1/2 tsp salt
  • 1/4 c butter, softened
  • 3/4 tsp instant coffee granules
  • 1 tsp hot water
  • 1/2 tsp baking soda
  • 1/4 c strong brewed coffee, room temperature
  • 1/4 tsp baking powder
  • 3 tbsps 1% buttermilk
  • 1/4 tsp ground cinnamon
  • 1 c prepared chocolate frosting
  • 1 egg
  • 2/3 c sugar
  • 1/4 c baking cocoa

Directions
  • Step #1 In a small mixing bowl, cream the butter & sugar.
  • Step #2 Beat in egg & vanilla.
  • Step #3 Combine the flour, salt, cocoa, baking soda, baking powder & cinnamon; add to creamed mixture alternately with coffee & buttermilk.
  • Step #4 Coat muffin c with nonstick cooking spray or use paper liners; fill half full with batter.
  • Step #5 Bake at 350 degrees F for 18-20 mins or until a toothpick comes out clean.
  • Step #6 Cool for 5 mins before removing from pan to a wire rack to cool completely.
  • Step #7 Place the frosting in a bowl.
  • Step #8 Dissolve coffee granules in hot water; stir in theto frosting until smooth.
  • Step #9 Frost ccakes.
  • Step #10 .
