Di's Buffalo Wings Recipe

Ingredients
  • 1 tsp ground black pepper
  • 1 tsp coarse salt
  • 2/3 c unbleached all-purpose flour
  • 2/3 c cornmeal
  • 2 c buttermilk
  • 1/4 tsp cayenne pepper, or to taste
  • 24 chicken drumettes
  • 4 c oil for frying
  • 1/4 tsp onion powder to taste
  • 1 c hot pepper sauce
  • 1/2 tsp garlic powder, divided
  • 1 1/2 tsps Italian-style seasoning
  • 1 stick unsalted butter

Directions
  • Step #1 Place the chicken drumettes & buttermilk in a large bowl.
  • Step #2 Soak drumettes approximately 30 mins.
  • Step #3 Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Step #4 In a medium bowl, sift together flour & cornmeal.
  • Step #5 Mix in coarse salt, black pepper, garlic powder, cayenne pepper, onion powder & Italian-style seasoning.
  • Step #6 Dip the drumettes in the flour mixture, then place this in the hot oil.
  • Step #7 Fry until golden brown, 12 to 13 mins.
  • Step #8 Remove from oil & drain on paper towels.
  • Step #9 Melt butter in a medium saucepan over low heat/flame.
  • Step #10 Blend in the hot pepper sauce.
  • Step #11 Remove from heat & use for dipping the fried drumettes.
