Ingredients
1 tsp ground black pepper
1 tsp coarse salt
2/3 c unbleached all-purpose flour
2/3 c cornmeal
2 c buttermilk
1/4 tsp cayenne pepper, or to taste
24 chicken drumettes
4 c oil for frying
1/4 tsp onion powder to taste
1 c hot pepper sauce
1/2 tsp garlic powder, divided
1 1/2 tsps Italian-style seasoning
1 stick unsalted butter
Directions
Step #1 Place the chicken drumettes & buttermilk in a large bowl.
Step #2 Soak drumettes approximately 30 mins.
Step #3 Heat oil in deep-fryer to 375 degrees F (190 degrees C).
Step #4 In a medium bowl, sift together flour & cornmeal.
Step #5 Mix in coarse salt, black pepper, garlic powder, cayenne pepper, onion powder & Italian-style seasoning.
Step #6 Dip the drumettes in the flour mixture, then place this in the hot oil.
Step #7 Fry until golden brown, 12 to 13 mins.
Step #8 Remove from oil & drain on paper towels.
Step #9 Melt butter in a medium saucepan over low heat/flame.
Step #10 Blend in the hot pepper sauce.
Step #11 Remove from heat & use for dipping the fried drumettes.
