Cheesy Spinach Casserole Recipe

Ingredients
  • 1 tsp dried minced onion
  • salt & pepper to taste
  • 1 egg
  • 1/2 c sour cream
  • 1 (10 oz) package frozen sliced spinach, thawed
  • 4 tbsps grated Parmesan cheese, divided
  • 6 oz uncooked spaghetti
  • paprika to taste
  • 1 (8 oz) package shredded Monterey Jack cheese
  • 1/2 (14 oz) can artichoke hearts, drained & sliced
  • 1/4 c milk

Directions
  • Step #1 Bring a large pot of lightly salted water to a boil.
  • Step #2 Cook spaghetti in boiling water for 8 to 10 mins, or until al dente; drain.
  • Step #3 Preheat oven to 350 degrees F (175 degrees C).
  • Step #4 In a 2 quart casserole dish, whisk together egg, milk, & sour cream.
  • Step #5 Using a wooden spoon, 2 tbsps Parmesan cheese, stir in the spinach, Monterey Jack cheese, artichoke hearts, & cooked spaghetti.
  • Step #6 Spice up with minced onion, salt, & pepper.
  • Step #7 Top with a sprinkling of paprika & remaining Parmesan cheese.
  • Step #8 Cover, & bake in preheated oven for 15 mins.
  • Step #9 Remove cover, & bake for another 15 mins.
  • Step #10 Let stand 2 mins before serving.
