Date And Apple Cake

A gorgeous cake that's not too heavy but explodes with sweet buttery goodness. Won best cake in the 2009 Icebreaker Company Cake-Off, Wellington, New Zealand (judged by chefs Steve Logan and Al Brown!)
Ingredients
- 2 cups diced, peeled apple shopping list
- 1 cup chopped dates shopping list
- 3/4 cup boiling water shopping list
- 1 tsp baking soda shopping list
- 125 grams butter shopping list
- 1 cup sugar shopping list
- 1 egg shopping list
- 1 1/2 cups flour shopping list
- 1 tsp vanilla essence shopping list
- __TOPPING__ shopping list
- 50 grams butter shopping list
- 1tbsp milk shopping list
- 3/4 cup brown sugar shopping list
- 1 cup coconut shopping list
How to make it
- Place apple and dates in a bowl. Sprinkle with baking soda. Add water and leave to sit for a short time, until cooled.
- Cream butter and sugar.
- Add egg and vanilla essence.
- Mix all ingredients together, including flour.
- Place into cake tin. Bake at 140-150 C for 45-60 minutes.
- Heat topping ingredients together until mixed and place topping on cake when 3/4 cooked.
- Bake an extra 5-10 minutes.
