CRAB AND CUCUMBER ROLLS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Adair Estate in Sulphur Springs, Texas in 1994.

Ingredients
  • 1 large cucumber
  • 6-1/2 ounces crabmeat
  • 4 tablespoons mayonnaise
  • 1-1/2 teaspoons finely grated onion
  • 1/8 teaspoon salt
  • 1/2 teaspoon granulated sugar
  • 5 dashes Tabasco sauce

Directions
  1. Cut ends off cucumber and cut into 3 pieces.
  2. Remove seeds with corer making a large cavity.
  3. Mix crab, mayonnaise, onion, salt, sugar and Tabasco then stuff into cucumber.
  4. Wrap cucumber in plastic wrap and chill then slice into 1/2" thick slices.
