Baked Salmon With Creole Mustard Sauce Recipe
I usually serve this with mustard mashed potatoes or long grain rice.

Ingredients
  • SAUCE:
  • 1 c whipping cream
  • 3/4 c creole mustard (or other coarse grain mustard)
  • 4 tsp worcestershire sauce
  • 1 tbsp dijon mustard
  • 3/4 tsp ground black pepper
  • 1/2 tsp dried basil
  • 1/4 tsp ground white pepper
  • 1/4 tsp cayenne pepper
  • 1 c sour cream
  • FISH:
  • two 1 1/2 lb center cut salmon fillets
  • 1/4 c (1/2 stick) unsalted butter, melted
  • 3 tbsp golden brown sugar
  • 3 tbsp soy sauce
  • 2 tbsp fresh lemon juice
  • 2 tbsp dry white wine

Directions
  1. SAUCE;
  2. Combine all ingredients EXCEPT SOUR CREAM in heavy medium saucepan.
  3. Simmer until very thick, stirring frequently, about 5 minutes.
  4. FISH:
  5. Line baking pan with foil.
  6. Arrange fish skin side down in single layer on foil.
  7. Mix butter, brown sugar, soy, lemon juice and wine in bowl.
  8. Pour over fish.
  9. Cover fish and refrigerate at least 1 hour and up to 6.
  10. Uncover fish and bake until cooked through, basting occasionally with pan drippings.
  11. Bake about 18 minutes.
  12. Meanwhile, rewarm sauce over low heat, stirring constantly.
  13. Add sour cream and whisk until just heated through. DO NOT BOIL.
  14. Season to taste s and p.

What a great sauce! Sour cream, whipping cream and mustard - it is already in my saved box. I could use this with chicken too! Fabulous!
