Baked Salmon with Creole Mustard Sauce

- SAUCE: shopping list
- 1 c whipping cream shopping list
- 3/4 c creole mustard (or other coarse grain mustard) shopping list
- 4 tsp worcestershire sauce shopping list
- 1 tbsp Dijon mustard shopping list
- 3/4 tsp ground black pepper shopping list
- 1/2 tsp dried basil shopping list
- 1/4 tsp ground white pepper shopping list
- 1/4 tsp cayenne pepper shopping list
- 1 c sour cream shopping list
- FISH: shopping list
- two 1 1/2 lb center cut salmon fillets shopping list
- 1/4 c (1/2 stick) unsalted butter, melted shopping list
- 3 tbsp golden brown sugar shopping list
- 3 tbsp soy sauce shopping list
- 2 tbsp fresh lemon juice shopping list
- 2 tbsp dry white wine shopping list
How to make it
- SAUCE;
- Combine all ingredients EXCEPT SOUR CREAM in heavy medium saucepan.
- Simmer until very thick, stirring frequently, about 5 minutes.
- FISH:
- Line baking pan with foil.
- Arrange fish skin side down in single layer on foil.
- Mix butter, brown sugar, soy, lemon juice and wine in bowl.
- Pour over fish.
- Cover fish and refrigerate at least 1 hour and up to 6.
- Uncover fish and bake until cooked through, basting occasionally with pan drippings.
- Bake about 18 minutes.
- Meanwhile, rewarm sauce over low heat, stirring constantly.
- Add sour cream and whisk until just heated through. DO NOT BOIL.
- Season to taste s and p.

What a great sauce! Sour cream, whipping cream and mustard - it is already in my saved box. I could use this with chicken too! Fabulous!
