Dianes Clam And Corn Chowder Recipe
This is a chowder has a creamy texture but is chocked full of chunky potatoes and fresh corn.

Ingredients
  • 4 slices crisp bacon, crumbled
  • 1 medium onion, chopped
  • 1/4 c butter
  • 2 cans (6-8 oz) chopped clams with liquor
  • 2 fresh steamed corns on the cob kernals removed
  • 3 c diced potatoes
  • 1/2 tsp salt or to taste
  • 1/4 tsp fresh ground pepper
  • 1 can cream of mushroom or celery soup
  • 1 can chicken broth
  • 2 c heavy cream
  • 1/4 c flour (I use Wondra and I add more if needed for consistancy)

Directions
  1. Saute chopped onion in butter.
  2. Add everything else except flour.
  3. In measuring cup, mix flour and a little warm water to dissolve.
  4. Add roux to mixture and bring to boil.
  5. Reduce heat, cover and simmer 30 minutes.
  6. (For thicker chowder add addtional flour)
