How to make it

  • Tapioca pudding: Prepare in advance, with enough time to chill thoroughly before assembling.
  • In a 4 cup microwavable bowl(such as a corningware glass measuring cup), combine the cocoa, salt, sugar , and tapioca; add the milk and egg. With a wire whisk, blend the ingredients together well. Let stand for at least 5 minutes. (I let it stand for up to an hour, the longer it stands, the more the tapioca expands)
  • Next place in microwave oven. In 2 or 3- minute -increments cook on High, and then whisk the ingredients before zapping 90 seconds more, and once again whisking. As it continues to heat, the viscosity will be noticed . Whisk very well, trying to eliminate any lumps. Continue this pattern of zapping 1-2 minutes and whisking until it comes to a full boil. (Keep a close eye on the tapioca as soon as you notice the pudding's thickening. Do not set the micro. for 3 minutes and walk away! ) As soon as it starts bubbling, remove from oven. Add the cinnamon and vanilla and stir in to blend. Let it cool. As soon as it is cool enough to refrigerate, do. The pudding will thicken as it cools.
  • Cooking times will vary, depending on micro. oven.
  • Assembly of Parfait:
  • In 8 clear vessels, spoon alternate layers of chocolate tapioca, banana slices and coolwhip continuing until the vessel is full. Sprinkle cinnamon and/or cocoa on top of the last layer of cool whip.
