Gingered Squash and Pear Soup

- 1 onion,chopped shopping list
- 1 Tbs grated ginger shopping list
- 1 large butternut squash,peeled,seeded,cut in chunks shopping list
- 2 ripe pears,,peeled,cored and chopped shopping list
- 4 c chicken broth shopping list
- salt and pepper shopping list
- sour cream shopping list
- toasted pumpkin seeds shopping list
How to make it
- Saute onion and ginger in a littl oil in large pot until onion is tender. Add butternut squash,pears,chicken broth and salt and pepper to taste.
- Bring to boil;cover,reduce heat and simmer 15 mins until squash is tender. Cool slightly,then puree till smooth. Garnish with sour cream and toasted pumpkin seeds.
