Japanese Fruit Pie Recipe
We were surprised by how good something this easy can be! It's similar to pecan pie. I found it in an old community recipe book.

Ingredients
  • 1/2 cup melted butter
  • 2 eggs
  • 1/2 cup raisins
  • 1 tsp vanilla
  • 1 cup sugar
  • 1/2 cup pecans
  • 1/2 cup coconut
  • 1 9" pie shell

Directions
  1. Mix ingredients and pour into pie shell.
  2. Bake at 350 for 40-45 minutes.
  3. Cook time is slightly hard to judge - the pie will not quite be set in the middle. Let sit until almost room temperature.
  4. Best when served warm.

Alterations


Researching on the Internet, I found that most recipes call for vinegar (can use white, but cider is best), anywhere from 2 tsp to a tablespoon. And they may eliminate the vanilla. Personal taste!
