Strawberry Spinach Salad With Sweet Onion And Vinaigrette Recipe
STRAWBERRY SPINACH SALAD WITH SWEET ONION AND VINAIGRETTE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cashion Estate in Terrell, Texas in 1996.

Ingredients
  • 3 cups strawberries stemmed and quartered
  • 2 bunches spinach stemmed washed well and spun dry
  • 1/2 cup thinly sliced sweet onions
  • 1/2 cup sliced almonds toasted
  • Vinaigrette:
  • 1/4 cup white wine vinegar
  • 1 tablespoon finely minced fresh ginger
  • 2 tablespoons Dijon mustard
  • 3 tablespoons honey
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup olive oil
  • 2 teaspoons poppy seeds

Directions
  1. Toss spinach, berries and onions with vinaigrette then sprinkle with almonds and serve.
  2. To make vinaigrette whisk together vinegar, ginger, mustard, honey, sugar, salt and pepper.
  3. Gradually whisk in oil emulsifying vinaigrette then stir in poppy seeds.
