Ingredients

3 cups strawberries stemmed and quartered

2 bunches spinach stemmed washed well and spun dry

1/2 cup thinly sliced sweet onions

1/2 cup sliced almonds toasted

Vinaigrette:

1/4 cup white wine vinegar

1 tablespoon finely minced fresh ginger

2 tablespoons Dijon mustard

3 tablespoons honey

2 tablespoons granulated sugar

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/3 cup olive oil

2 teaspoons poppy seeds

Directions

Toss spinach, berries and onions with vinaigrette then sprinkle with almonds and serve.

To make vinaigrette whisk together vinegar, ginger, mustard, honey, sugar, salt and pepper.

Gradually whisk in oil emulsifying vinaigrette then stir in poppy seeds.
