How to make it

  • Preheat oven to 450 then oil a gratin dish with olive oil.
  • Place cauliflower in steaming basket above 1" of boiling water then cover and steam 1 minute.
  • Lift lid and allow steam to escape for 15 seconds then cover again and steam 8 minutes.
  • Remove from heat and refresh with cold water then drain on paper towels and transfer to dish.
  • Season cauliflower with salt and pepper then toss with 2 tablespoons oil and half the thyme.
  • Spread in an even layer then place garlic in mortar and pestle with 1/4 teaspoon salt.
  • Mash to a paste then combine with goat cheese and milk in food process and blend until smooth.
  • Add remaining thyme and freshly ground pepper to taste then pulse together.
  • Spread this mixture over cauliflower in an even layer.
  • Just before baking sprinkle on the breadcrumbs and drizzle on remaining tablespoon oil.
  • Bake 20 minutes then serve immediately.
