Cauliflower Gratin with Goat Cheese Topping

- 1 large cauliflower broken into florets shopping list
- 3 tablespoons extra virgin olive oil shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 6 ounces fresh goat cheese shopping list
- 1 garlic clove halved shopping list
- 5 tablespoons milk shopping list
- 1 teaspoon chopped fresh thyme leaves shopping list
- 1/4 cup dry fine breadcrumbs shopping list
How to make it
- Preheat oven to 450 then oil a gratin dish with olive oil.
- Place cauliflower in steaming basket above 1" of boiling water then cover and steam 1 minute.
- Lift lid and allow steam to escape for 15 seconds then cover again and steam 8 minutes.
- Remove from heat and refresh with cold water then drain on paper towels and transfer to dish.
- Season cauliflower with salt and pepper then toss with 2 tablespoons oil and half the thyme.
- Spread in an even layer then place garlic in mortar and pestle with 1/4 teaspoon salt.
- Mash to a paste then combine with goat cheese and milk in food process and blend until smooth.
- Add remaining thyme and freshly ground pepper to taste then pulse together.
- Spread this mixture over cauliflower in an even layer.
- Just before baking sprinkle on the breadcrumbs and drizzle on remaining tablespoon oil.
- Bake 20 minutes then serve immediately.
