This is an easy meal that is healthy and tasty. Serve with a salad and warmed bread. Another kiddie favorite!!

Saute 1 large onion (diced) with extra virgin olive oil in a large stockpot for 5 min.
Stir in 1 Tbsp. oregano and 2 tsp. cumin
Stir in 28 oz. diced tomatoes and 8 oz. tomato sauce.
Substitute 3 cups of chicken stock with a 14.5 oz can of vegetarian vegetable broth.
Add 1 Tbsp. chili powder and any other desired seasonings. (salt, pepper, hot sauce, etc.)
Bring to a boil, reduce to medium heat and cover. Let it simmer for about 30 minutes.
Add 3 cans of drained, rinsed great northern beans (white beans) and 1 can or drained, rinsed black beans.
Cook until beans are tender and serve.
Garnish with shredded white cheddar and a dollop of sour cream if desired.
Goes great with hot, crusty bread dipped in seasoned olive oil.
