Down Home Style Chicken Vegetable Stew Recipe

Ingredients
  • 2 1/2 to 3 lb broiler or fryer cut up
  • 6 cups water
  • 2 tbls. beef bouillon
  • 2 medium tomatos chopped
  • 2 medium onions chopped
  • 2 medium potatos cut into 1/2 in. slices
  • 2 medium sweet potatos cut into 1/2 in. slices
  • 3 ears of corn cut into 3 pieces
  • 1/4 lb. squash cut into 3 pieces
  • 1/2 cup fresh or frozen peas
  • 1 small hot chili steamed, seeded and sliced
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • snipped chives

Directions
  1. Heat Chicken,water, and bouillon to boiling in Dutch Oven; reduce heat. Cover & simmer 30 min. Skim off fat. Add remaining ingredients except chives. Heat to boiling; reduce heat. Cover and simmer until thickest pieces of chicken are done & vegetables are tender. about 20 min. Garnish each serving with chives.
