Antioxi - Muffins

- 1 cup Robin Hood Nutri-flour Blend (or white whole wheat) flour shopping list
- 1/2 tbsp tapioca flour shopping list
- 1/2 cup unsweetened cocoa powder shopping list
- 1 tsp baking soda shopping list
- 3/4 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 3/4 cup non-fat soy milk (I used So Good Trim) shopping list
- 1 tbsp vinegar shopping list
- 1/2 cup brewed, cold espresso shopping list
- 1/4 cup packed light brown sugar shopping list
- 1/2 tsp powdered stevia extract shopping list
- 1/3 cup applesauce shopping list
- 1/3 cup dried cranberries (I used cherry-flavoured ones!) shopping list
- 2 oz good quality, 70% cocoa chocolate, melted shopping list
How to make it
- Preheat oven to 350°F. Grease 12 muffin cups.
- Whisk together flours, cocoa, baking soda, baking powder and salt.
- In separate bowl whisk together soymilk, vinegar and espresso.
- In large bowl, beat together brown sugar, stevia and applesauce.
- Stir in flour mixture alternately with coffee mixture, beginning and ending with the dry ingredients.
- Stir in cranberries and chocolate.
- Bake 20 minutes, cool completely on rack.
