How to make it

  • Pound meat until 1/4" thick.
  • Cut into small pieces.
  • Combine flour,salt and pepper,coat steaks on both sides.
  • Heat oil in heavy fry pan,cook about 5 minutes on both sides.
  • Remove from fry pan and keep warm.
  • Leaving about 4 tablespoons of pan drippings behind.
  • Blend in the 3 tablespoons flour,stirring all the while,scraping all the good cooked juices on the bottom of the pan and cook until bubbly.
  • Stir in milk,salt and pepper.
  • Continue to cook stirring all the while,scraping from bottom and sides of fry pan,cook until gravy is thick and bubbles.
  • Serve venison steaks,and gravy with eggs,biscuits.
