Ingredients
  • 2 Pounds Venison Steak,sliced thin
  • 1/2 Cup Flour
  • 1 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1/2 Cup Oil
  • 4 Tablespoons Pan Drippings
  • 3 Tablespoons Flour
  • 2 1/4 Cups Milk
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Directions
  1. Pound meat until 1/4" thick.
  2. Cut into small pieces.
  3. Combine flour,salt and pepper,coat steaks on both sides.
  4. Heat oil in heavy fry pan,cook about 5 minutes on both sides.
  5. Remove from fry pan and keep warm.
  6. Leaving about 4 tablespoons of pan drippings behind.
  7. Blend in the 3 tablespoons flour,stirring all the while,scraping all the good cooked juices on the bottom of the pan and cook until bubbly.
  8. Stir in milk,salt and pepper.
  9. Continue to cook stirring all the while,scraping from bottom and sides of fry pan,cook until gravy is thick and bubbles.
  10. ~Serve Venison Steaks,and gravy with eggs,biscuits~
