Pork Chops with Papaya Mango Salsa

- 2 tablespoons white tequila shopping list
- 2 tablespoons jalapeno pepper jelly melted shopping list
- 2 tablespoons fresh lime juice shopping list
- 1/4 teaspoon kosher salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 4 lean boned center cut loin chops shopping list
- canola oil shopping list
- Salsa: shopping list
- 1/2 firm ripe papaya shopping list
- 1 medium firm ripe mango shopping list
- 1 small red onion chopped fine shopping list
- 2 tablespoons fresh lime juice shopping list
- 1 tablespoon fresh lemon juice shopping list
- 1/2 small fresh jalapeno pepper shopping list
- 1 tablespoon chopped fresh coriander sprigs shopping list
- 1/4 teaspoon kosher salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Prepare grill or broiler.
- Combine first 6 ingredients in large bag then seal bag and marinate 8 hours in refrigerator.
- Turn occasionally then remove chops from bag and reserve marinade.
- Place pork on grill rack or broiler pan coated with canola oil then cook 7 minutes per side.
- Baste occasionally with reserve marinade then serve with salsa.
- To make salsa seed and peel papaya then peel mango and cut flesh from pit.
- Cut papaya and mango into 1/4" pieces.
- In a small bowl toss together fruit, onion and juices.
- Seed and mince jalapeno then stir into salsa with coriander, salt and pepper.
- Chill covered at least 2 hours and up to 24 hours.
