Irresistable Meat Loaf Recipe
My kids love beef, but are fussy with spices, at my wife's behest i make things the kids like, and we can eat, this is an evolving one - lots of "off the shelf" stuff - sorry

Ingredients
  • 6 rashers or streaky bacon
  • 1 kg of lean beef mince (leaner the better)
  • 1 sachet of french onion soup
  • 1/2 packet of onion sage stuffing
  • 1 small packet of parmesan cheese
  • fresh parsley
  • ground pepper
  • dried oregano
  • fresh garlic (chopped finely)
  • 3 eggs (non cage of course)
  • 2 bottles of good beer (I go with SA's barossa valley, Knapstein Enterprice Lager)
  • 1/4 can of tomato soup

Directions
  1. Fragment the mince into a large bowl, mix in dry ingredients by hand
  2. Add egg and tomatoe soup
  3. spray olive oil into a cake tin and line with the streaky bacon, leave some hanging over
  4. squash in the meat mix, press in firmly
  5. flop over the bacon and cover with aluminium foil
  6. cook for 35 minutes at 180C
  7. remove foil, cover with the beer and cook for a further 10 minutes till juices evaporated
  8. Serve with gravy and mashed potato, and the second beer
