How to make it

  • In a medium bowl, combine 1/4 cup sugar,2 tbs. lemon zest and 1 cup flour
  • With 2 knives or a pastry cutter, cut in butter until mixture becomes crumbly
  • Press into an ungreased, 9-inch square microwave safe baking dish
  • Microwave crust on high until surface appears dry, about 3-4 minutes
  • In a medium mixing bowl, combine remaining 1 cup sugar and remaining 1 tbs. lemon zest
  • Beat in eggs, remaining 1 tbs. flour, baking powder and salt
  • Stir in lemon juice until batter is well mixed
  • Pour batter over crust
  • Microwave on medium power until surface is firm, about 8-10 minutes
  • Let cool, cut into bars, then dust tops with powdered sugar

    Very nice to have when you get a 'snack attack' and don't want to wait for the oven to heat up.
