Microwave Sweetly Tart Lemon Bars

- 1 1/4 cups sugar, divided shopping list
- 3 tbs. grated lemon zest, divided shopping list
- 1 cup plus 1 tbs. flour, divided shopping list
- 1/3 cup butter, softened shopping list
- 2 eggs shopping list
- 1/2 teas. baking powder shopping list
- 1/4 teas. salt shopping list
- 1/3 cup lemon juice shopping list
- Powdered sugar, for dusting shopping list
How to make it
- In a medium bowl, combine 1/4 cup sugar,2 tbs. lemon zest and 1 cup flour
- With 2 knives or a pastry cutter, cut in butter until mixture becomes crumbly
- Press into an ungreased, 9-inch square microwave safe baking dish
- Microwave crust on high until surface appears dry, about 3-4 minutes
- In a medium mixing bowl, combine remaining 1 cup sugar and remaining 1 tbs. lemon zest
- Beat in eggs, remaining 1 tbs. flour, baking powder and salt
- Stir in lemon juice until batter is well mixed
- Pour batter over crust
- Microwave on medium power until surface is firm, about 8-10 minutes
- Let cool, cut into bars, then dust tops with powdered sugar
