Egg Plant Smoked Mozzarella Amp Basil Rolls Recipe

  • 1 big egg plant
  • 3 tablespoons olive oil, plus extra for drizzling, for your pleasure.
  • 6 ounces of smoked mozzarella, cut into 8 slices.
  • 2 plum tomatoes cut into 4 slices.
  • 8 large basil leaves
  • balsamic vinegar, for drizzling, for you pleasure.
  • salt and freshly ground black pepper.
  • serves 4.

Directions
  1. 1st cut eggplant lengthways into 10 thin slices donot use outer most edges, sprinkle the slices with salt and leave for 20 mins.
  2. rinse, then pat dry with dry towel.
  3. preheat broiler or have grill ready line rack with foil. place the eggplant slices and brush down with oil. broil or grill for 8-10 mins until tender and golden, turn only once.
  4. remove eggplant slices from th broiler or grill, then place a slice of mozzarella and tomato and basil leaf in the center of each eggplant
  5. season to taste, for your pleasure. Fold the eggplant over the filling and broil seam side down untill heated through and the mozzarella begins to melt. Serve drizzled with olive oil and a little balsamic vinegar, for your pleasure.
