Coconut Curry Chicken Recipe
This is a delicious coconut curry recipe. Goes well with plain rice or coconut rice.

Ingredients
  • 3 tbsp curry powder
  • 3tbsp olive oil
  • 1tbsp garlic
  • 1 tbsp dried basil
  • 1 large onion diced
  • 1 large green or red pepper diced
  • 1 carrot diced
  • 1 large sweet potato or yam diced
  • 1 lb chicken cubed
  • 1 can of diced tomatoes(14oz) or 1 cup chopped tomato (cherry, roma, etc)
  • 1 can(14oz) coconut milk
  • 1/4 cup flour
  • 14 oz of water
  • 1tbsp sugar
  • salt and pepper to taste

Directions
  1. Heat the garlic, curry and oil for about 5 minutes on low.
  2. Add all the vegetables except the tomatoes and cook on medium until slightly tender (8-10minutes). While you are cooking the vegetables, cook the chicken in a frying pan until juices run clear.
  3. Add the chicken to the vegetable mixture.
  4. Add the tomatoes, milk, flour, basil and sugar . If you are using canned tomato, you can add the juice. Add as much water as desired for how much liquid you want in your curry. (I normally add about 21oz if I am using fresh tomatoes, 10-14 oz if I am using canned tomatoes). Add salt and pepper to desired taste.
  5. Bring to a boil and simmer until potatoes are tender(Takes about 40-50minutes).
