Coconut curry chicken

- 3 tbsp curry powder shopping list
- 3tbsp olive oil shopping list
- 1tbsp garlic shopping list
- 1 tbsp dried basil shopping list
- 1 large onion diced shopping list
- 1 large green or red pepper diced shopping list
- 1 carrot diced shopping list
- 1 large sweet potato or yam diced shopping list
- 1 lb chicken cubed shopping list
- 1 can of diced tomatoes(14oz) or 1 cup chopped tomato (cherry, roma, etc) shopping list
- 1 can(14oz) coconut milk shopping list
- 1/4 cup flour shopping list
- 14 oz of water shopping list
- 1tbsp sugar shopping list
- salt and pepper to taste shopping list
How to make it
- Heat the garlic, curry and oil for about 5 minutes on low.
- Add all the vegetables except the tomatoes and cook on medium until slightly tender (8-10minutes). While you are cooking the vegetables, cook the chicken in a frying pan until juices run clear.
- Add the chicken to the vegetable mixture.
- Add the tomatoes, milk, flour, basil and sugar . If you are using canned tomato, you can add the juice. Add as much water as desired for how much liquid you want in your curry. (I normally add about 21oz if I am using fresh tomatoes, 10-14 oz if I am using canned tomatoes). Add salt and pepper to desired taste.
- Bring to a boil and simmer until potatoes are tender(Takes about 40-50minutes).
