How to make it

  • Cook the potatoes stove top until they are done. They will fall off a knife when they are done.
  • While the potatoes are cooking diced the onions and mix in a large bowl with the parsley, salt and pepper. I typically use about 3-4 T of parsley, but I love it.
  • When potatoes are done drain and run cold water over them for a few minutes
  • With a potato masher mash and mix the potatoes in the large bowl with onion, and parsley.
  • Mix in mustard and mayonnaise to taste
  • Garnish with parsley and paprika
  • For a little bit of a kick I sometimes use only 2 T or Mustard and 1T of dijon mustard.
