Low Fat Low Cal Mac And Cheese

- 2 boxes mac and cheese (with the powder-not the ready made sauce) shopping list
- 1 bag of vegetarian "beef" crumbles-again, not sure how real meat will work shopping list
- 1 or 2 cans of mushrooms depending on your taste shopping list
- 1-2 cans stewed tomatoes shopping list
How to make it
- Cook the noodles as per the directions on the box
- while the noodles sit in the strainer (I don't like to wash more dishes than I have to) add the burger, mushrooms and stewed tomatoes just to warm (obviously, if you use regular burger you're going to have to cook it-vegetarian burger just needs to be heated)
- when the mixture is warm and moist (from the mushrooms and tomatoes) add the 2 packets of powdered cheese. NOTHING ELSE do not add the milk and butter as per the box directions-trust me!
- Mix it all up and add the noodles
- 225 calories per 1 cup serving. Not awful if you want some mac and cheese and/or want the kids to eat their veggies.

This is very different and I like it. I would probably use button mushrooms that I had gently sauteed with a chopped onion. I like the concept and I would certainly make it. Thanks for sharing and high 5.
