Slow Cooker Thai Pork With Peanut Sauce Recipe
This is beyond easy to prepare, and it will cook while you're at work. It's healthy too, and best of all, you can use the cheapest cut of pork: It cooks so long it'll be tender & delicious by the end. Kinda now, kinda wow.

Ingredients
  • 2lb boneless Boston butt pork roast
  • 2 large red bell peppers, seeded and cut into strips
  • 1/3 cup teriyaki sauce
  • 2 T rice vinegar
  • 1 tsp red pepper flakes
  • 2 cloves garlic, minced
  • 1/4 cup creamy peanut butter, all-natural
  • For Serving:
  • 1/2 cup chopped green onion (white part & some of the green)
  • 1/4 cup dry-roasted peanuts, chopped
  • 2 limes, cut into 8 to 12 wedges

Directions
  1. Coat the slow cooker with nonstick cooking spray
  2. Put the pork, bell peppers, teriyaki sauce, rice vinegar, red pepper flakes, and garlic in the cooker.
  3. Cover and cook on LOW for 8-9 hours. The pork will be fork-tender.
  4. Remove the pork from the cooker and coarsely chop.
  5. Add the peanut butter to the liquid in the cooker. Stir well to dissolve the PB and blend with the cooking liquid.
  6. Return the pork to the cooker and toss to coat the meat evenly.
  7. Serve over jasmine rice, and sprinkle each serving with green onions and chopped peanuts. Pass the lime wedges.
