Sweet Sugar-free Strawberry Pie Recipe
Summery, refreshing, delectable strawberry pie! Except this version is sugar free! Delicious!

Ingredients
  • Crust:
  • 1 1/3 C. Flour
  • 1 stick Butter (cut in 1" slices)
  • 1/4 cup cold water
  • 1/2 tsp salt
  • Filling:
  • 4 cups strawberries (sliced)
  • 1 package sugar-free strawberry Jello
  • 1 cup artificial sugar (e.g. Splenda)
  • 1 1/2 cup water
  • 2 T. honey
  • 1 tsp lemon
  • Topping:
  • 1 1/2 cup whipping cream
  • 1 tsp vanilla
  • 4 T sweetner

Directions
  1. Mix flour , salt and butter in food processor or in bowl with pastry blender until it resembles course crumbs
  2. Slowly add 1/4 water and mix until it becomes a dough
  3. Flatten into a disc and refrigerate for at least one hour
  4. Roll out dough 1/8 inch and put in pie pan, cut dough 1 inch from rim
  5. Fold over edges of dough to form a crust, prick bottom and sides
  6. Allow to refrigerate for 30 minutes
  7. Prick crust again
  8. Place parchment paper over crust with rice on top to keep it down
  9. Bake on 400 degrees for 12 minutes
  10. Prick bottom and sides of crust once again
  11. Bake for another 6 minutes or just until turning golden
  12. Boil water and add cup of sweetener, honey and lemon
  13. Mix until it thickens, then add Jello mix
  14. Stir for a few minutes and then allow to cool
  15. Once crust and filling are cooled, place sliced strawberries and filling into crust
  16. Refrigerate for about an hour
  17. Top with whipped cream and a side of ice cream...and ENJOY!
