Sweet Sugar-free Strawberry Pie

- Crust: shopping list
- 1 1/3 C. flour shopping list
- 1 stick butter (cut in 1" slices) shopping list
- 1/4 cup cold water shopping list
- 1/2 tsp salt shopping list
- Filling: shopping list
- 4 cups strawberries (sliced) shopping list
- 1 package sugar-free strawberry Jello shopping list
- 1 cup artificial sugar (e.g. Splenda) shopping list
- 1 1/2 cup water shopping list
- 2 T. honey shopping list
- 1 tsp lemon shopping list
- Topping: shopping list
- 1 1/2 cup whipping cream shopping list
- 1 tsp vanilla shopping list
- 4 T sweetner shopping list
How to make it
- Mix flour , salt and butter in food processor or in bowl with pastry blender until it resembles course crumbs
- Slowly add 1/4 water and mix until it becomes a dough
- Flatten into a disc and refrigerate for at least one hour
- Roll out dough 1/8 inch and put in pie pan, cut dough 1 inch from rim
- Fold over edges of dough to form a crust, prick bottom and sides
- Allow to refrigerate for 30 minutes
- Prick crust again
- Place parchment paper over crust with rice on top to keep it down
- Bake on 400 degrees for 12 minutes
- Prick bottom and sides of crust once again
- Bake for another 6 minutes or just until turning golden
- Boil water and add cup of sweetener, honey and lemon
- Mix until it thickens, then add Jello mix
- Stir for a few minutes and then allow to cool
- Once crust and filling are cooled, place sliced strawberries and filling into crust
- Refrigerate for about an hour
- Top with whipped cream and a side of ice cream...and ENJOY!
