Ingredients
  • 1/3 cup chopped celery
  • 1/3 cup chopped onion
  • 1/4 cup green pepper
  • 2 tbsp butter
  • 1 - 14 1/2 can tomaotes, cut up
  • 1 1/2 cup chicken broth
  • 2/3 cup long grain rice
  • 1 tsp dried basil or thyme, crushed
  • 1/2 tsp garlic salt
  • 1/4 tsp pepper
  • 1/4 - 1/2 tsp bottled hot pepper sauce
  • 1 bay leaf
  • 2 cups cubed cooked chicken or turkey

Directions
  1. In a large skillet cook celery, onion, and green pepper in butter till vegies are tender. Stir in the undrained tomatoes, chicken broth, rice, basil or thyme, garlic salt, pepper, hot pepper sauce, and bay leaf. Bring to boiling; reduce heat. Cover and simmer about 20 minutes or till rice is tender. Stir in chicken; cook till heated through. Discard bayleaf.
  2. Makes 4 servings.
