Pumpkin and Sweet Potato Soup

- 2 sweet potatoes, peeled and diced shopping list
- 1 medium sugar pumpkin, seeded and cubed shopping list
- 3 tbsp. of olive oil shopping list
- 2 chopped leeks shopping list
- 1 small chopped white onion shopping list
- 1 stalk of chopped celery shopping list
- 1 small chopped carrot shopping list
- 2 tbsp. of chopped garlic shopping list
- 1 qt. of chicken stock shopping list
- 1 c. of heavy whipping cream shopping list
- 1 bay leaf shopping list
- 1 tbsp. of chopped fresh sage shopping list
- 1 pinch of ground cloves shopping list
- 1 pinch of ground nutmeg shopping list
- 1 pinch of ground cinnamon shopping list
- salt to taste shopping list
- ground black pepper to taste shopping list
How to make it
- First you want to heat some oil in a pan over medium heat.
- Now saute the leeks, onions, celery, carrot, sweet potatoes, pumpkin, and garlic until they began to brown.
- Then you can add in bay leaf, stock, cream, bringing this to a boil then let simmer until the veggies are tender.
- Now you can add in the sage, cloves, nutmeg, cinnamon, and salt and pepper.
- Finally, take out the bay leaf and puree soup.
- Ladle up and serve!
