  • cake:
  • 1 cup plain flour
  • 1&1/2 teaspoons baking powder
  • 3 tablespoons sugar
  • 2oz (60g) butter or substitute
  • 1/4 cup milk
  • 1 well beaten egg
  • pinch of salt
  • Topping:
  • 2 or 3 small cooking apples
  • 3 tablespoons sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon melted butter or substitute
  • Glaze:
  • 1/4 cup apricot jam
  • 1 tablespoon hot water

Directions
  1. Cake: Sift flour, baking powder and sugar into a basin. Rub in butter well, then stir in beaten egg and milk. (I always add salt to the egg. Some people sift it in with the flour).
  2. Spread mixture in well greased pie plate.
  3. Topping: Peel and slice apples and arrange in circular pattern to cover cake completely.
  4. Mix together sugar, cinnamon and nutmeg; sprinkle over apples. (If you don't have nutmeg just cinnamon will do). Melt butter and dribble it over the sugar. Bake in moderate oven for approx 30 minutes. (Keep at eye on it, it seems to cook rather quickly). Pour glaze over.
  5. Glaze: Stir the hot water into the jam, pour over top of cake as soon as it is removed from the oven.
  6. Serve with cream or custard.
