How to make it

  • Preheat oven to 375
  • Melt butter in olive oil, in a large skillet, over meduim heat
  • Saute green onion, garlic and roasted pepper for 3-5 minutes, until tender
  • Add mushrooms
  • Cook 1-2 minutes
  • Add spinach and warm through, stirring to combine
  • Add pinch of salt and pepper
  • Add feta and mix well.
  • Remove from heat and let cool.
  • Meanwhile, in mixing bowl, whisk together eggs, yolks, milk and small pinch of salt and pepper
  • Once cooled, spoon and press spinach mixture into thawed pie crust
  • Pour egg mixture, slowly over and into spinach mixture, stirring gently to incorporate
  • Top with handful of parmesan cheese
  • Bake at 375 for 1 hour, until top is slightly brown and eggs are cooked through.
  • Enjoy!
