Spinach Veggie and Feta Quiche

- 2 Tbs olive oil shopping list
- 1-2 Tbs butter shopping list
- 1 roasted red pepper, diced shopping list
- 2 garlic cloves, minced shopping list
- 2 green onions, (use both green and white) chopped shopping list
- 1/2 cup mushrooms, chopped shopping list
- 1 box frozen spinach, thawed and drained very well, and chopped shopping list
- Pinch of kosher salt (not much, as cheeses have a lot of sodium) shopping list
- Pinch of pepper shopping list
- 3 eggs shopping list
- 2 egg yolks shopping list
- 8 ounces crumbled feta cheese (you could use light) shopping list
- 1 cup whole milk shopping list
- 1 ready made, deep dish pie crust, in tin pan shopping list
- Handful of parmesan cheese shopping list
How to make it
- Preheat oven to 375
- Melt butter in olive oil, in a large skillet, over meduim heat
- Saute green onion, garlic and roasted pepper for 3-5 minutes, until tender
- Add mushrooms
- Cook 1-2 minutes
- Add spinach and warm through, stirring to combine
- Add pinch of salt and pepper
- Add feta and mix well.
- Remove from heat and let cool.
- Meanwhile, in mixing bowl, whisk together eggs, yolks, milk and small pinch of salt and pepper
- Once cooled, spoon and press spinach mixture into thawed pie crust
- Pour egg mixture, slowly over and into spinach mixture, stirring gently to incorporate
- Top with handful of parmesan cheese
- Bake at 375 for 1 hour, until top is slightly brown and eggs are cooked through.
