COD AU GRATIN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lewis Estate in Bedford, Texas in 1982.

Ingredients
  • 1 pound cod fillets cubed
  • 1/4 cup butter
  • 1 small white onion finely chopped
  • 1/4 cup flour
  • 1-1/4 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/8 teaspoon nutmeg
  • 1/2 cup breadcrumbs
  • 1/2 cup cheddar cheese grated

Directions
  1. Preheat oven to 375 then place cod in a lightly greased baking dish.
  2. In heavy saucepan melt butter and sauté onion until soft.
  3. Stir in flour and whisk constantly for 4 minutes then gradually stir in half the milk.
  4. Return to heat and beat until smooth and shiny.
  5. Gradually add remaining milk, salt, pepper and nutmeg.
  6. Cook sauce stirring until smooth and thickened then pour over fish.
  7. Sprinkle with breadcrumbs and cheese then bake 30 minutes.
