Ingredients
  • 10 dried chilies de'arbol
  • 7 ried chilies de guajillo
  • 1 Tbs Kosher salt
  • 4 Kirby cucumbers, chilled
  • 4 fresh limes

Directions
  1. Use a coffee grinder to grind chilis into a powder
  2. Mix in the salt.
  3. Slice cucumbers lengthwise in eights and place in a large bowl
  4. Sqeeze limes over cucumbers
  5. Add a tsp of the chili salt mixture
  6. ( save remainder in a sealed container )
  7. Toss well
  8. Let the cukes marinate for a couple of minutes
  9. Remove cucumbers to a pl;ate
  10. Sprinkle a bit more of the chili salt powder over the cukes to taste
