How to make it

  • Place the carrots in a medium saucepan with water to cover.
  • Add the butter and bring to a boil.
  • Simmer until the carrots are tender, about 5 minutes.
  • Use a slotted spoon to transfer the carrots to a food processor or blender, leaving the cooking liquid in the saucepan.
  • Add the ginger and puree until smooth.
  • Season with salt and pepper to taste.
  • Return the carrot cooking water to a simmer, then reduce the heat to medium-low and simmer, taking care not to burn the liquid (there are a lot of natural sugars from the carrots in it), until the liquid is reduced to about 2 tablespoons and is syrupy, about 15 minutes.
  • Add this glaze to the puree and pulse to blend.
