PORK BURGERS WITH RANCH COLESLAW This recipe came from an estate sale. I obtained it when I purchased the family collection from the Truman Estate in Midlothian, Texas in 1987.

Ingredients
  • 3 cups packaged coleslaw mix
  • 1/2 cup prepared ranch salad dressing
  • 1/4 teaspoon grated lemon peel
  • 1 tablespoon butter
  • 1/2 cup minced red onion
  • 1-1/4 pounds ground pork
  • 1/2 cup shredded zucchini
  • 1/2 cup shredded Swiss cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 Kaiser rolls split

Directions
  1. Heat grill.
  2. In a medium bowl combine coleslaw mix, dressing and lemon peel.
  3. Cover and refrigerate 30 minutes.
  4. Melt butter in medium skillet over medium high heat then add onion and cook 5 minutes.
  5. Remove from heat and cool then cover a cookie sheet with plastic wrap.
  6. Lightly mix pork, onion, zucchini, cheese, salt and pepper in large bowl just until combined.
  7. Drop 4 equal mounds of pork mixture on prepared sheet.
  8. Cover with another piece of plastic wrap and gently press mounds into four 1/2" thick patties.
  9. Grill burgers over medium heat about 5 minutes per side or until browned.
  10. Meanwhile grill rolls cut sides down until toasted about 1 minute.
  11. Arrange burgers on bottoms of rolls then divide coleslaw among burgers and top with roll tops.
