How to make it

  • In pan heat olive oil and add 1 diced onion, saute until soft
  • Add mince and cook until browned
  • add chilli, capsicum, canned tomatos (undrained), kidney beans (drained) and black-eyed peas
  • then add chicken stock, cumin, chilli powder (to taste) and cinammon stick
  • simmer for about 20 mins
  • serve in a bowl topped with some plain corn chips for scooping and chopped lettuce.
