How to make it

  • Heat 1 Tbs oil and 1 Tbs butter in heavy-bottomed skillet. Add the onion and green pepper and cook over low heat until soft,8 to 10 mins. Remove to bowl and set aside. Wipe out bottom of skillet with paper towel. Meanwhile,make a mash of 1/2 of the potatoes. Gently fold together the mashed potatoes,remaining boiled potatoes,turkey,onions pepper,parsley and thyme. Salt and pepper to taste. Heat remaining oil and butter in skillet. Add hash mixture,gently pressing down evenly with spatula across the surface. Put a heavy plate on top of hash and cook over medium heat till bottom browns,5 to 10 mins. Carefully flip hash over to cook on the other side.
  • Serve hot with poached or fried eggs.

    This one sounds good too. I could sub the turkey for possum or snake for that matter. It tastes like chicken anyway.
